What is Glutamate?

There is glutamate in the kombu stock used in Japanese cooking.
This glutamate is the base for umami taste. Other foods with glutamate are tomatoes and cheeses that are umami rich.
Inside the body, glutamate is used as a source of energy and also to synthesize many other amino acids.
